Not only do I find cooking to be a stress reliever at the end of the day, but it's also a way I show that I care about people. Sharing is caring and I've been told I'm a decent cook so I started sharing my creations with #ThisGirlCooks. Let's be clear... cooking and baking are a bit different.
Baking needs to be more precise which I find hinders my creativity so cooking is more my jam.
All that I cook is typically based off a recipe that I find in a Cookbook or on Pinterest, but I always alter slightly toward my taste.
Rule #1 ... if onion is an ingredient I'll replace it with a little garlic for flavor. ONION IS THE DEVIL! Since I was a kid if my mom was cutting one in the kitchen not only would my eyes water, but I'd start gagging. Can I eat a cooked onion in small amounts without this reaction... yes. However, I can never prep one.
Rule #2... be able to eyeball things like thyme, basil, oregano... I'd rather eyeball than dirty my teaspoons. I usually add a little more pepper than a recipe requires or add some red pepper flakes for a little added kick.
The recipe I whipped up last night I found on Pinterest. I've been trying to find more Mediterranean style meals for the health factor, but also I love olives and feta!
The recipe was super easy and didn't require a lot of dirty dishes to prep. I didn't have cherry tomatoes so tomatoes sliced up from the vine did fine and I added an extra bell pepper in place of onion for flavor and color (I used one yellow and one orange).
Easy prep. Easy clean up. I've also discovered a new love for bone in chicken thighs. Typically I will shop for recipes using boneless chicken breast, but I found the thighs super flavorful and even easier to cook up.
