#ThisGirlCooks - Fish with Orzo Salad and Homemade Strawberry Muffins

Who does the cooking in your household? I do the majority and it's because I like it! I find it to be a creative outlet. Last night I whipped up some whitefish with a panko crust, orzo salad, and I even made some homemade strawberry muffins.

Typically I find recipes on Pinterest and then I add my own tweaks. #1 thing I always alter... onions... I hate them! Onion powder or salt ok for seasoning, but I'll never cook up a raw onion.

So what recipes did I use for last nights' creations.

#1 - Parm Crusted White Fish

This one I actually followed almost exact. Time Saver Tips... I keep minced garlic in the fridge at all times. 1 clove is about 1 teaspoon of the minced goodness. And I used haddock. Cod initially is what I grabbed and then saw that haddock was cheaper. Save where you can these days!

#2 Mediterranean Orzo Salad

Clearly I skipped the red onion. Love this salad so much! I'm a huge fan of olives and feta. The Pin lists a bunch of subs or additions... cherry tomatoes & artichoke hearts are great.

#3 Strawberry Muffins

OK... I always ask the roomies if they have special requests for dinner or snacks. One asked for Strawberry Muffins thinking I was either going to do store bought (not really the season) or nab the box of Jiffy Mix. PFFFFFF clearly I was going to make them from scratch. Now baking you have to be a bit more precise so I didn't divert much. Next batch though I may go a little heavier on the brown sugar than white to see how it tastes. Either way these muffins got a big thumbs up last night!
