Chicken Salad with Fried Goat Cheese Balls!

I LOVE TO COOK! I love food and it allows me to be a bit creative. I use recipes I find online as guidelines and test out my creations often times on the neighbors...so far no complaints! 

Last night this was all for me... I wanted a rotisserie chicken and fried goat cheese balls real bad! This is a simple recipe because I bought everything ready to go except the goat cheese balls. 

SO... what I used 

One Super Bird from Big Y 

50/50 blend lettuce, half an avocado, blackberries, & pecans

For the dressing... I mixed white balsamic vinegar and olive oil. A little more olive oil than vinegar. 

For the goat cheese balls... 

Take an 8 oz. log of goat cheese. Slice up and roll some balls. Dip the rolled balls in flour, then egg (whisk one egg in a bowl), then coat in bread crumbs. I used whole wheat, but panko break crumbs are delicious too! Now you are ready to drop the balls (insert giggle) into olive oil that you have heated up over medium heat on the stove. Remember don't heat olive oil too fast...that's how you set yourself on fire (true story I've done it). Once the balls are browned up place on a paper towel to cool and drain. Throw all your salad ingredients together and BOOM! Shouldn't take you more than 15 minutes to put this all together.
